Ingredients
2 to 3 tablespoons organic butter
1 pound organic, wild caught or non-farm raised shrimp, peeled and deveined
3 gloves of organic garlic, minced
1 organic red pepper cut into small pieces
½ teaspoon red pepper flakes. More or less to taste
¼ to ½ cup organic chicken stock or organic chicken bone broth
4 medium organic zucchini noodles
3 tablespoons fresh parsley leaves or 2 of dried
Parmesan cheese to top if you eat dairy
1 lemon cut in wedges to garnish
3 tablespoons parsley to garnish
Instructions
Melt organic butter in large skillet over medium high heat. If shrimp is uncooked add shrimp, red pepper, garlic, and red pepper flakes. Stirring occasionally until shrimp is pink about 3-4 minutes. Stir in chicken stock and lemon juice, season with Sea salt and pepper to taste bring to a simmer, stir in zucchini noodles and simmer for 2-3 minutes. Serve immediately garnish with parmesan cheese and parsley can add a squeeze of lemon.
