Greek Zucchini Noodle Salad

Ingredients

¼ Lemon organic juice or one whole lemon

1 Tablespoon balsamic vinegar

1 Tablespoon olive oil

1 teaspoon fresh oregano, finely chopped

Sea salt and pepper

2 medium zucchinis spiraled into noodles

1 cup organic cherry tomatoes, halved

2 oz. crumbled feta or goat cheese

Instructions

In a small bowl make the dressing. Whisk together lemon juice, vinegar, olive oil, seasonings and set aside. In a large bowl mix toss together the dressing and zucchini9 noodles, tomatoes, olives, and dressing. Top if desired with cheese

Notes Feel free to partially cooked zucchini noodles by steaming for a few minutes then chill. Noodles better tossed when cold. If you are eliminating vinegar substitute extra lemon juice.
